Our cheeses are made the old fashioned way — hand made in small batches.  We have several different varieties of raw milk cheeses, including gouda, raclette, Trappist style, tomme style and others.

Dave Eagle started the company after many years of practicing law in the great State of Texas. Dave’s journey down “a road less traveled” led him down the path of artisan cheese making, the local food movement and the idea of terroir.  Eagle and others in his company are avid cheese-lovers with an affinity for the specialty regional cheeses that are made in different parts of the world, especially in western Europe. They are  making their Texas versions of some of these traditional cheeses, along with a few original cheeses from right here in the Lone Star State.
